      De-stemmed manually by a team of 75 people. Fermented in open wooden vats. Traditional foot press with light pump-overs. Malolactic fermentation in an egg-shaped oak vat built by Taransaud, an "Ovum," where the wine was kept for approx. 6 month before being racked in smaller barrels.
