Noble sweet wines flatter with high and highest predicate levels: from Auslese to Trockenbeerenauslese or ice wine with an expressive fruit melt. Areas with exceptional microclimates are required for the development of such wines: such as Lake Neusiedl in Austria's Burgenland or the river landscapes along the Rhine and Moselle in Germany. The world-famous Bordelais Sauternes and Hungarian Tokaji are refined and steeped in centuries of tradition. They are characterised by a high concentration of residual sweetness and acidity, usually in combination with the incomparable aroma of noble rot (Botrytis cinerea). Sweet pastries and tempting desserts can draw on the full potential of this wine. Those who prefer the savoury variety will be happy with combinations of sweet wine and mature blue cheese, while gourmets from all over the world will of course also enjoy (truffled) goose liver terrine. Noble sweet red and oxidative sweet wines are the perfect complement to chocolatey desserts.
