      The Chablis wine region is in France, in the northern part of the Bourgogne region in the Yonne department between Paris and Beaune, a short hop from the Champagne region. The Chablis vineyards are the most extensive "village" vineyards of Burgundy, covering a total area of 2,630 hectares. The more northerly latitude contributes greatly to the particular style of Chablis wines.

      Vinification:

      The grapes are gently pressed and fermented directly in stainless-steel tanks at cool temperatures without any maceration. Followed by malolactic fermentation to give the wine more structure, body and fullness.
